Kale Chips

>> January 1, 2014

One of the many produce I have been wanting to get my hands on is kale. I've always searched for this back in Manila, and although I heard from friends that they have seen kale sold in some major supermarkets, I always fail to find them. Now that I'm here, I've been enjoying kale since the beginning of winter. I made numerous dishes with kale that I failed to blog about. But then again, it will still be winter for the next couple of months so kale will not be so hard to get, I might be able to recreate and document those that I already cooked.

Today's lekker is kale chips. So easy and simple to make. So healthy and so yummy at the same time.

Ingredients:
A bunch of kale
Olive oil
Salt and pepper
Chili flakes (optional)

1. Preheat oven to 200 C.
2. Rinse the kale. Remove the hard stems.
3. The key to a crispy kale chips is to completely dry them. The kale sold here is pre-washed so it's not a problem, but I still used paper towels to completely dry the leaves.
4. Sprinkle some olive oil on the kale leaves. Use your fingers to massage the oil completely on the leaves.
5. Lay them flat on a baking pan, sprinkle some salt and pepper and some chili flakes.
6. Bake in the oven for 15 minutes or until it's done. Check on it from time to time so to make sure they don't burn.

Deep Fried Eggplant and Zucchini

>> March 1, 2011

Here's a great food idea for a healthy and easy to prepare finger food.

Ingredients:
1 eggplant
1 zucchini
grated parmesan cheese
all-purpose flour
fine breadcrumbs
1 small beaten egg
salt and pepper to taste

1. Wash the eggplant and zucchini thoroughly.
2. Cut them in circles.
3. Mix the breadcrumbs and parmesan cheese.
4. Coat the zucchini and eggplants with a thin layer of all-purpose flour.
5. Dip each into a bowl of beaten egg.
6. Roll it in the parmesan and breadcrumbs mixture.
7. Heat (vegetable) oil in a deep frying pan and fry the vegetables until golden brown.
8. Blot it with a paper towel to remove excess oil.
9. Sprinkle with salt and pepper to taste.

I personally prefer no dip, but if you wish, it's perfect with mayo.

Carrot Balls Rewind

>> November 14, 2010

The much awaited food shoot has finally come! I invited my friend to join me in my food photo experiment who's a newbie in photography hobby. It was fun to teach him basic stuff, and at the same time, to have another person, aside from my fiance, to showcase my home cooking haha!

I did 4 dishes, but not everything turned out grand in the photos. It wasn't that bad though. The food designing, angle experimenting, those are kinda new to me so learning was fun. I chose to cook my most wanted carrot balls (Mark loves it so much!) because I didn't get a nice picture of it the first time I made it.

This is the first time in many months that I cooked in the morning. But once again, I had to depend on my flash to give my food nice lighting because the sky won't just cooperate with me yesterday. It can't decide whether it wants to rain or it wants to shine - so it just stayed gray the entire time I was shooting. I want natural light!

Bubble Blahs

I work and live at night time. I am a person deprived of natural light. I rarely cook in the morning as I'm almost always asleep, else busy with house chores. As much as I love natural light in my photography, I'm afraid I don't usually have that luxury, unless I sacrifice my sleep, or make an effort to stay up longer during the day to do a cooking + photo session. So I depend on my flash, and sometimes, available light from my fluorescent bulbs. Although, in my opinion, nothing beats the natural light, I am, so far, satisfied with my shots using my flash that I learned to love.

I always look forward to the weekends for some sunlight.
